Sweet Onion Tart with Apples


2T Extra Virgin Olive Oil
2 Sweet Onions, sliced
2 Apples, tart and sliced
2 Sheets Puff Pastry
1/2C Sour Cream
Thyme, to taste
Grated Sharp Cheddar Cheese
S/P, to taste


Saute sweet onions in oil 15 minutes; add apples, s/p and cook 2 minutes. Place pastry on parchment paper covered baking sheet and prick with fork. Spread with sour cream, top with onions and apples. Bake at 400 degrees 30-35 minutes. Remove from oven and garnish with fresh thyme, cheese and s/p.
